Great on <span style=\"text-decoration: underline;\">Almond-Cocnut Truffels<\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Almond-Coconut Truffles<\/strong> <\/span>\u00a0 1Cup Dates or Raisins, 2Cups soaked Almonds(or 1 lb &#8220;Just Almond Meal&#8221; Trader Joe&#8217;s)\u00a02Cups dried shredded Coconut, 1 Tbsp Vanilla 1 Tbsp Almond Extract, 1 Lemon juiced.\u00a0 Put Dates, Raisins or other sweetener with Lemon Juice in food processor and mix to a paste.\u00a0 Add Almonds or Almond Meal and mix. Grind Coconut in blender t5o a fine buttery paste and add to food processor.\u00a0 Add the rest and mix well.\u00a0 Form little balls, and refrigerate for an hour. Finger print cookies and fill the indentation with &#8220;Frosting&#8221; top with a dried fruit (cranberry, cherry, blueberry etc.\u00a0\u00a0 Sprinkle with Coconut if you like!<\/p>\n<div>\n<div>\n<div data-ft=\"{&quot;type&quot;:11,&quot;tn&quot;:&quot;C&quot;}\"><strong><a href=\"https:\/\/www.facebook.com\/SOLChef\/posts\/470250456341272\" data-hovercard=\"\/ajax\/hovercard\/page.php?id=270557216310598\">SOL Food<\/a><\/strong><\/div>\n<div data-ft=\"{&quot;tn&quot;:&quot;M&quot;}\">\n<div id=\"id_50a84542adc163914779422\">Coconut and Carrot Salad2 cups of grated organic carrots<br \/>\n1 1\/2 cups of fresh frozen coconut, available at Indian markets, if you substitute dry shredded coconut, add a 1\/3 cup of coconut water to moisten it<br \/>\n1\/4 to 1\/3 cup of finely chopped dates<br \/>\n&#8230;<\/p>\n<div>3\/4 cup of chopped cilantro<br \/>\n1 jalapeno, finely diced<br \/>\n2 TB pickled young ginger, chopped finely<br \/>\n2 TB finely chopped green, red or sweet onionMix all ingredients in a bowl<\/p>\n<p>Dressing<\/p>\n<p>3\/4 cup of lime juice<br \/>\n1\/4 cup of grape seed oil<br \/>\n1 TB walnut oil<br \/>\npinch of cayenne<br \/>\nsalt and pepper to taste<\/p>\n<p>Shake ingredients in a mason jar to blend and blend into salad.
