Italian parsley, finely chopped<\/p>\n<p>Put zucchini and the leek in a steamer to steam for about 2 minutes. (The zucchini can also be used raw if you like. Put in a medium serving bowl; add the Italian parsley and toss with Creamy Pesto Dressing.<\/p>\n<p>Creamy Pesto Dressing<\/p>\n<p>Grind until fine in a blender:<br \/>\n\u00bc c. raw walnuts or pine nuts<\/p>\n<p>Add and blend together with the nuts until smooth:<br \/>\n1 c. fresh basil leaves, chopped<br \/>\n1 small clove garlic<br \/>\n\u00bc c. fresh lemon juice<br \/>\n\u00bc c. extra-virgin olive oil<br \/>\n\u00bc &#8211; 3\/8 c. water<\/p><\/div>\n","protected":false},"excerpt":{"rendered":"<p>Zucchini Salad with Creamy Pesto Dressing Zucchini Salad Wash and prepare: 2 medium zucchinis, thin sliced 1 Tbsp. leeks, thin sliced 2 Tbsp.
