Zucchini Salad with Creamy Pesto Dressing

Zucchini Salad

Wash and prepare:
2 medium zucchinis, thin sliced
1 Tbsp. leeks, thin sliced
2 Tbsp. Italian parsley, finely chopped

Put zucchini and the leek in a steamer to steam for about 2 minutes. (The zucchini can also be used raw if you like. Put in a medium serving bowl; add the Italian parsley and toss with Creamy Pesto Dressing.

Creamy Pesto Dressing

Grind until fine in a blender:
¼ c. raw walnuts or pine nuts

Add and blend together with the nuts until smooth:
1 c. fresh basil leaves, chopped
1 small clove garlic
¼ c. fresh lemon juice
¼ c. extra-virgin olive oil
¼ – 3/8 c. water
